Place cream cheese in a large bowl and beat with an electric mixer until very smooth.
Add the cheddar cheese, chives, garlic powder, Italian seasoning, salt, and pepper and mix until very smooth.
Scoop the mixture onto the center of a sheet of plastic wrap and shape into a ball. Place the plastic-wrapped cheese ball into a bowl and place in the refrigerator for at least 6 hours to set.
Before serving, remove the cheese ball from the plastic wrap and roll it in the chopped pecans to coat. Serve with Wellington Multigrain Crackers
