Watermelon Salsa

Ingredients:

  • 1 box Stone Wheat Wellington Crackers
  • 2 tablespoons butter, melted
  • 1 tablespoon cinnamon sugar
  • 1 cup watermelon, chopped
  • 1/3 cup cantaloupe, chopped
  • 1/3 cup cucumber, chopped
  • ½ avocado, chopped
  • ¼ cup green onions, chopped
  • ¼ cup feta cheese, crumbled
  • 1 jalapeno, seeds and ribs removed, finely diced
  • 2 tablespoon fresh mint, finely chopped
  • Juice and zest of 1 lime
  • ½ teaspoon garlic salt

Directions

  1. Brush melted butter onto Stone Wheat crackers and sprinkle with cinnamon sugar.
  2. Toss remaining ingredients together into a bowl and serve with cinnamon stone wheat crackers.
