Strawberry Shortcake Cracker Parfaits

Ingredients:

Cracker Layer

  • 1 box Wellington Traditional Water Crackers, lightly crushed

Strawberry Layer

  • 1 cup fresh strawberries, diced
  • 1 tbsp strawberry jam

Cream Filling

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract

Directions

  1. Crush the Wellington Traditional Water Crackers, leaving some larger pieces for texture.
  2. In a small bowl, stir together the diced strawberries and strawberry jam. Set aside.
  3. In a large mixing bowl, beat the cream cheese, powdered sugar, heavy whipping cream, and vanilla extract until light, fluffy, and smooth.
  4. Assemble the parfaits by adding a layer of cream filling to the bottom of each jar.
  5. Top with a layer of crushed crackers, followed by a spoonful of the strawberry mixture.
  6. Repeat with another layer of cream filling, crackers, and strawberries.
  7. Finish with a few strawberries and a sprinkle of cracker crumbs on top.
  8. Serve immediately or refrigerate for up to 2 hours before serving.
