Strawberry Pineapple Salsa

Ingredients:

  • Whole pineapple to use as a bowl
  • 1 cup fresh pineapple, diced
  • 1 cup fresh strawberries, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, seeded and diced
  • ½ red onion, diced
  • ½ cup cilantro, chopped
  • 4 tbsp lime juice
  • Wellington Traditional Water Crackers

Directions

  1. To make the bowl, cut about half of the pineapple off. Leaving the stem intact on the larger section of the pineapple. Cut out the middle creating a bowl. Set aside.
  2. In a large bowl, add all the ingredients except the lime juice. Drizzle lime juice over the mixture. Mix thoroughly.
  3. Place the salsa in the pineapple bowl.
  4. Chill and serve with Wellington Traditional Water Crackers!
