Ingredients:
- Whole pineapple to use as a bowl
- 1 cup fresh pineapple, diced
- 1 cup fresh strawberries, diced
- 1 red bell pepper, diced
- 1 jalapeno, seeded and diced
- ½ red onion, diced
- ½ cup cilantro, chopped
- 4 tbsp lime juice
- Wellington Traditional Water Crackers
Directions
- To make the bowl, cut about half of the pineapple off. Leaving the stem intact on the larger section of the pineapple. Cut out the middle creating a bowl. Set aside.
- In a large bowl, add all the ingredients except the lime juice. Drizzle lime juice over the mixture. Mix thoroughly.
- Place the salsa in the pineapple bowl.
- Chill and serve with Wellington Traditional Water Crackers!
