Strawberry Cheesecake Crackers

  • 1 cup of strawberries, diced
  • 1 tbsp granulated sugar
  • Juice of 1/2 of a lemon
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla
  • Pinch of salt
  • Wellington Traditional Water Crackers


  1. In a medium bowl, stir together diced strawberries, sugar, and lemon juice. Let macerate while you prepare the cream cheese.
  2. Combine cream cheese, powdered sugar, vanilla, and salt in a bowl and beat for 30-45 seconds using an electric mixer. Mixture should be smooth and fluffy.
  3. Spoon 1 tsp of the cream cheese mixture on top of each Wellington Traditional Cracker and top with a spoonful of strawberries. Serve immediately.
