Ingredients:
- 1 cup of strawberries, diced
- 1 tbsp granulated sugar
- Juice of 1/2 of a lemon
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla
- Pinch of salt
- Wellington Traditional Water Crackers
Directions
- In a medium bowl, stir together diced strawberries, sugar, and lemon juice. Let macerate while you prepare the cream cheese.
- Combine cream cheese, powdered sugar, vanilla, and salt in a bowl and beat for 30-45 seconds using an electric mixer. Mixture should be smooth and fluffy.
- Spoon 1 tsp of the cream cheese mixture on top of each Wellington Traditional Cracker and top with a spoonful of strawberries. Serve immediately.
