Pumpkin Deviled Eggs

Ingredients:

  • 8 hard boiled eggs
  • ¼ cup mayonnaise
  • 1 tbsp chopped green onions
  • 1-2 tsp dijon mustard
  • ⅛ tsp salt ¼ tsp paprika
  • Red food coloring
  • Yellow food coloring
  • Fresh chives
  • Wellington Traditional Water Crackers

Directions

  1. Peel the hard boiled eggs and cut them in half lengthwise. Scoop out the yolks and put them in a bowl. Set egg whites aside.
  2. In another small bowl, combine mayonnaise, onions, dijon mustard and spices. Stir in 2 drops of red food coloring and 1 drop of yellow food coloring.
  3. Add the mayonnaise mixture to the egg yolks. Mix well until the yolk mixture is smooth, creamy and a consistent orange color.
  4. Place the yolk mixture into a disposable piping bag fitted with a large star tip.
  5. Pipe the filling into the hollow of the egg halves. Add a chive to the top of the egg for the pumpkin stem.
  6. Place the eggs on a serving platter and serve with Wellington Traditional Water Crackers!
