Firecracker Chicken Salad Boats

Ingredients:

  •  2 cups cooked chicken, shredded or finely chopped
  • 1/3 cup Greek yogurt or light mayo
  • 1 to 2 tablespoons sriracha or chili paste, to taste
  • 1 tablespoon rice vinegar or lemon juice
  • 1 teaspoon honey
  • 1 green onion, thinly sliced
  • Salt and pepper, to taste
  • Butter lettuce or romaine leaves, washed and dried
  • Wellington Cracked Pepper Crackers, crushed, for topping

Directions

  1. In a medium bowl, whisk together the Greek yogurt or mayo, sriracha, vinegar or lemon juice, and honey until smooth. Add the chicken and green onion, then season with salt and pepper. Stir until evenly combined.

  2. Spoon the chicken salad into lettuce leaves, filling each cup generously. Finish with a sprinkle of crushed Wellington Cracked Pepper Crackers on top to add crunch and a subtle peppery bite. Serve immediately.
