Elote Bruschetta

  • 3 ears sweet corn
  • ⅓ cup crumbled cotija cheese
  • 3 tbsp grated parmesan
  • 1 tbsp minced cilantro
  • 1 lime, zested and juiced
  • 1 cup mayonnaise, divided
  • For the Spice Blend:
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp cayenne pepper optional
To Assemble:


  1. Place corn under broiler and rotate every 30 seconds or until each side begins to blister and char.
  2. Slice kernels off of cobs and place into a mixing bowl, discarding cobs.
  3. Add to the mixing bowl with the corn, the cotija, Parmesan, cilantro, lime zest and juice, and 1/2 cup mayonnaise and stir together. Season with salt and pepper.
  4. Place all spices for spice blend into a small mixing bowl and whisk together.
  5. To assemble: Spread a small amount of remaining mayonnaise onto each Wellington Toasted Sesame Cracker and sprinkle with the spice blend.
  6. Top each Wellington Toasted Sesame Cracker with a spoonful of the corn mixture, more cotija cheese, some sliced serrano pepper and lime zest. Serve.
