Ingredients:
- 3 ears sweet corn
- ⅓ cup crumbled cotija cheese
- 3 tbsp grated parmesan
- 1 tbsp minced cilantro
- 1 lime, zested and juiced
- 1 cup mayonnaise, divided
- For the Spice Blend:
- 2 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp cayenne pepper optional
- 1 box Wellington Toasted Sesame Crackers
- 2 tbsp crumbled cotija cheese
- 1 very thinly sliced serrano pepper
- Lime zest
Directions
- Place corn under broiler and rotate every 30 seconds or until each side begins to blister and char.
- Slice kernels off of cobs and place into a mixing bowl, discarding cobs.
- Add to the mixing bowl with the corn, the cotija, Parmesan, cilantro, lime zest and juice, and 1/2 cup mayonnaise and stir together. Season with salt and pepper.
- Place all spices for spice blend into a small mixing bowl and whisk together.
- To assemble: Spread a small amount of remaining mayonnaise onto each Wellington Toasted Sesame Cracker and sprinkle with the spice blend.
- Top each Wellington Toasted Sesame Cracker with a spoonful of the corn mixture, more cotija cheese, some sliced serrano pepper and lime zest. Serve.
