Avocado Fries

Ingredients:

  • 2 large avocados , sliced ½” thick wedges
  • 1 lime
  • 6 tablespoons JustEgg (or regular egg if non-vegan)
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon coarse ground black pepper
  • 1 package Wellington’s traditional crackers
  • ½ cup flour
  • vegetable oil spray
  • Dip of choice, for example Fry Sauce, Ranch, etc.

Directions

  1. Preheat the oven to 425°F.
  2. Squeeze lime over avocado slices.
  3. In a food processor, process crackers until coarse. You want a similar texture to Panko breadcrumbs. Transfer to a plate and set aside.
  4. Whisk together JustEgg, salt and pepper in a bowl or shallow plate.
  5. Dredge the avocado in flour, then in JustEgg, then in Wellington’s crackers that you’ve processed.
  6. Place on a baking sheet.
  7. Spray with vegetable oil spray.
  8. Bake for 10 minutes, or until golden brown.
  9. Flip the fries, spray with vegetable oil spray and bake for an additional 5 minutes.
Air-fryer method: Spray slices with oil. Bake in an air fryer (no need to preheat) at 400°F (200°C) for 10 to 12 minutes, or until golden brown. While hot, season with salt and pepper to taste. Serve with chipotle mayo for dipping.
