Ingredients:
- 2 large avocados , sliced ½” thick wedges
- 1 lime
- 6 tablespoons JustEgg (or regular egg if non-vegan)
- ¼ teaspoon kosher salt
- ⅛ teaspoon coarse ground black pepper
- 1 package Wellington’s traditional crackers
- ½ cup flour
- vegetable oil spray
- Dip of choice, for example Fry Sauce, Ranch, etc.
Directions
- Preheat the oven to 425°F.
- Squeeze lime over avocado slices.
- In a food processor, process crackers until coarse. You want a similar texture to Panko breadcrumbs. Transfer to a plate and set aside.
- Whisk together JustEgg, salt and pepper in a bowl or shallow plate.
- Dredge the avocado in flour, then in JustEgg, then in Wellington’s crackers that you’ve processed.
- Place on a baking sheet.
- Spray with vegetable oil spray.
- Bake for 10 minutes, or until golden brown.
- Flip the fries, spray with vegetable oil spray and bake for an additional 5 minutes.
